Crockpot Tortellini Soup đ˛ the perfect weeknight dinner with tons of leftovers for the week! It takes minimal effort to make, which is always a must during the week!

Ingredients
1 lb ground Italian sausageÂ
1 small white onionÂ
6 cups chicken bone brothÂ
1/2 cup finely chopped carrotsÂ
1/2 cup finely chopped celeryÂ
28 ounce can crushed tomatoesÂ
14 ounce can diced tomatoesÂ
2 tbsp tomato pasteÂ
Spices:
1 tsp garlic powderÂ
1/2 tsp saltÂ
1/2 tsp thymeÂ
1/2 tsp oregano
1/2 tsp pepperÂ
1 tsp red pepper flakes (optional)Â
18 ounces tortellini pastaÂ
2 1/2 cups baby spinachÂ
4 ounce cream cheese (room temp)
Method
Heat a skillet over medium heat. Add the Italian sausage meat and diced onion. SautĂŠ for 5-7 minutes. Drain the fat and add to the crockpot
While it cooks, chop the carrots and celery. Add all ingredients except for the tortellini, spinach, and cream cheese to the crockpot. Cook on high for 3-4 hours or low for 7-8 hours.Â
When you have 30 minutes left, add the tortellini, cream cheese, and spinach. Stir and continue to cook on high.
Serve and enjoy!
