Crockpot Lasagna Soup

Lasagna is one of my favorite comfort meals, but it is such a hassle to make! That’s why I put together this crockpot lasagna soup recipe. It’s got all the delicious flavor and feeling of the real dish, but made super easy by using a crockpot. I made this version a gluten-free recipe, too! This crockpot lasagna would be perfect on a cozy night in – definitely get it on your fall recipe menu. You can just put everything in the crockpot, and voila: you are meal prepped for a whole week of healthy lunches or healthy dinners. Let me know what you think if you try this one!

Crockpot Tomato Soup

This is the easiest, most comforting fall meal idea! Crockpot Tomato Soup and Sheet Pan Grilled Cheese. It’s an easy, healthy dinner idea that you can make for a group without much stress or fuss! The whole family will love it. I added a little kick with red pepper in the soup – it makes a great twist on a classic recipe! 

Chicken Noodle Soup

There’s nothing more comforting than a bowl of chicken noodle soup. This recipe is basic but we all know it’s a classic that never gets old, especially if you have a seasonal cold or allergies. I could eat this year-round! I add turmeric and extra veggies for extra anti-inflammatory benefits and it feels so healing to have on days you need a comfort meal. Soup is so simple and easy to make, too.

My weekly soup this week was a delicious Thai Chicken Curry Soup. We are soup obsessed over here, especially in the fall and winter. It can get a little boring eating the same soup every week though. This one is anything but boring. Packed with spices and loaded with flavor. Plus it’s a healthy Instant Pot soup which means it’s easy to make and easy to clean up.

Crockpot Lasagna

An easy & cozy recipe for soup season. Made with gluten free lasagna noodles and topped with ricotta cheese & mozzarella cheese. Follow along for more easy & healthy recipes ❤️

1 pound ground beef

1 onion, diced

1 red pepper, diced

14.5 oz can fire-roasted tomatoes

24 oz jar marinara sauce

6 cups beef bone broth

13 oz gluten free lasagna noodles

Salt and pepper to taste

Spices: 1 tbsp Italian seasoning, 1 tsp garlic powder, salt & pepper to taste 


Mozzarella cheese

Ricotta cheese


  1. Cook ground beef in a skillet for 4-5 minutes then drain grease 
  2. Add ground beef to the crockpot along with the red pepper, onion, tomatoes, marinara sauce, bone broth, & spices 
  3. Cook on high for 4 hrs or on low for 8 hrs 
  4. Break lasagna pieces into bite size
  5. After the soup has cooked, add lasagna noodles
  6. Cook on high for 30 minutes 
  7. Remove and serve! Add ricotta cheese and mozzarella cheese to each individual bowl as you serve it 
  8. Makes 6-8 servings.
