Crockpot Tomato Soup and Grilled Cheese

This is the easiest, most comforting fall meal idea! Crockpot Tomato Soup and Sheet Pan Grilled Cheese. It’s an easy, healthy dinner idea that you can make for a group without much stress or fuss! The whole family will love it. I added a little kick with red pepper in the soup – it makes a great twist on a classic recipe! You can just toss all the ingredients in the crockpot, and then make then put the grilled cheeses on a sheet pan right before serving – it couldn’t be more simple. Let me know if you try it!

Crockpot Red Pepper & Tomato Soup + Sheet Pan Grilled Cheese. Make dinner for a group without much stress or fuss! Throw everything in the crockpot + then before you’re about to serve the soup, make the grilled cheese.

Ingredients

Soup: 

1 tbsp olive oil

1 white onion, chopped 

2 red bell peppers, chopped

2 28oz cans plum tomatoes

1 cup vegetable broth

½ teaspoon salt

1/2 tbsp garlic

Grilled Cheese: 

6 slices of bread 

6 slices of cheese 

3 tbsp butter

Method

Soup:

Add all of the soup ingredients to the crockpot 

Cover and cook on high for 4 hrs or low for 8 hrs 

Add soup to a blender and blend until smooth

Grilled Cheese:

Instructions:

Preheat oven to 450F

Line a pan with parchment paper and add bread to the pan 

Add butter to 3 slices of bread, add cheese to the other 3 slices 

Bake for 5 minutes, remove, then combine into sandwiches 

Bake for another 4-5 minutes 

Remove, cut into small squares, add on top of soup 

Serve and enjoy!
