Fish Tacos with Mango Guacamole
I am in love with using fruit in savory recipes right now! Earlier this week, we had chicken teriyaki pineapple boats (recipe). Then last night we made these cajun fish tacos with mango guacamole. I used paleo, gluten free tortillas. You can use any tortilla you want but if you’re looking to keep the recipe gf + paleo make sure you get a brand that complies with that! Enjoyed these tacos outside on a perfect summer evening.

I eat tacos year round but making a seasonal guacamole is a fun way to switch things up! You could add pineapple in the guacamole recipe instead of mango if you wanted to. The mango + chili powder was a killer combo though!
Cajun Tilapia Steps:
I used 3 pieces of tilapia. I brushed them with olive oil then sprinkled with the cajun seasoning. You can either use a pre-made cajun seasoning or make your own!
Baked at 425F for 12 minutes. You can broil at the end to get them a little crispier.
The spicy fish wouldn’t be complete without a little sweetness to accompany it. So below are the steps to make the mango guacamole!
Guacamole Steps:
You need 3 ripe avocados. You’ll slice them in half, peel them, take the seed out, then mash. I like to leave my guacamole a little chunky so I don’t mash mine all the way.
Add the avocado to a bowl then add in diced onion, chopped cilantro, chili powder, and lime. You’ll add all of the guacamole ingredients minus the mango. Then mix everything together with a fork.
After you’ve mixed it together, add the mango in. Mix it in and then it’s ready to go!
Tortillas:
I used Siete Tortillas. You can find them at Walmart, Natural Grocers, Whole Foods, and other stores! Or Amazon. You can also make your own!
Hope you all have a nice summer evening soon to enjoy these easy, healthy fish tacos with mango guacamole!
