Vegan Caesar Salad

This vegan caesar salad is a plant based version of one of my favorite recipes! The vegan caesar dressing is so creamy with a cashew base and a lot of spices. You can use this dressing recipe for so many different meals- wraps, salads, sandwiches, and pasta salads are some of my favorite ways to use it!

Vegan Caesar Salad with chickpeas and sweet potatoes

What You Need For This Recipe:

Vegan Caesar dressing:

1 cup cashews

1 1/4 cup water

2 tbsp lemon juice (fresh)

2 tbsp capers

2 tbsp water from capers jar

2 tbsp Dijon mustard

2 tbsp vegan Mayo

2 garlic cloves (peeled)

2 tbsp nutritional yeast

Sprinkle of salt & pepper

Vegan Caesar Salad with chickpeas and sweet potatoes

Ingredients

Vegan Caesar dressing:

1 cup cashews

1 1/4 cup water

2 tbsp lemon juice (fresh)

2 tbsp capers

2 tbsp water from capers jar

2 tbsp Dijon mustard

2 tbsp vegan Mayo

2 garlic cloves (peeled)

2 tbsp nutritional yeast

Sprinkle of salt & pepper

 

Sweet Potatoes:

2 large sweet potatoes

2 tbsp olive oil

salt

pepper.

Chickpeas:

1 can of chickpeas drained and patted dry

2 tbsp olive oil

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1/4 tsp cayenne

salt

pepper

Method

Caesar Dressing:

Soak the cashews for at least an hour

Drain the water, add to a blender, add in the rest of the ingredients

Sweet Potatoes:

cut into cubes, coat with 2 tbsp olive oil + salt + pepper.

Bake at 425F for 30 minutes

Chickpeas:

Coat with 2 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 1/4 tsp cayenne, salt, and pepper.

Bake at 425F for 15 minutes.

Added avocado to the salad too!
