Gluten Free Peanut Butter Cookie Ice Cream Sandwich

One of my favorite recipes of all time! I don’t say this lightly either because they don’t contain my typical favorite foods: sweet potato and avocado haha. Instead, these are made with lots of peanut butter, ice cream, and only a few other goodies. They’re made with only 5 ingredients and they aren’t overly sweet so you can eat them without getting that sugar rush. I hope you guys become as obsessed as I am with this gluten free peanut butter cookie ice cream sandwich recipe. It will make me feel less crazy for my obsession 😉

How To Make Them:

These gluten free peanut butter ice cream cookie sandwiches (that’s a mouthful isn’t it haha) are made with only 5 ingredients! That’s it! I mean- do you need another reason to make them?!

First- you need to make the cookies. Preheat the oven to 325F. I made my go to PB cookie recipe. You can replace the peanut butter with whatever nut butter you like! Make sure it’s organic, no sugar added nut butter. I’m going to contradict myself when you see what ice cream I use (spoiler alert: Aldi’s version of Halo Top), but I don’t like my nut butter with a bunch of sugar and chemicals in it. Personal preference here but I think plain old peanut butter is the way to go.

So, for the cookies you need: 1 cup peanut butter, 1 egg, and 1/2 cup coconut sugar. That’s it! Seriously, even if you don’t make the ice cream sandwiches, make these cookies. They’re easy and so tasty.

Mix all the ingredients together in a bowl, then add cookies (I used a cookie scoop to get a good shape) to a pan lined with parchment paper. Makes 12 cookies. Put in the oven once it’s preheated and bake 15 minutes.

Place the cookies in the freezer for an hour.

What Ice Cream To Use:

Now, time to pick out what ice cream to use! This is 100% a personal preference. Use a dairy free ice cream, Halo Top, Aldi ice cream, just regular normal ice cream- seriously whatever you like! I’m not saying Halo Top is the healthiest ice cream out there but it’s what I love so I used the cheaper, Aldi version. You do you 🙂

Once the cookies have been in the freezer for an hour, use an ice cream scoop to add 2 scoops ice cream in between two cookies. Since the cookies are frozen, you can squish them together to make the ice cream lay flat. Makes 6 sandwiches.

If you want, you can melt some chocolate chips to dip the sandwiches in. I dipped 1/2 of the sandwiches in 1/2 cup of chocolate chips melted. Freeze again for 2-3 hours.

How To Store Them:

Store them in the freezer just like any ice cream recipe!

Gluten free, peanut butter ice cream sandwiches that are made with only 5 ingredients. This healthy, easy dessert is the perfect way to enjoy a late night treat!

Ingredients

Cookies:

1 cup runny peanut butter

1/2 cup coconut sugar

1 egg

Ice Cream:

1 pint whatever ice cream you love. I used Aldi’s version of vanilla Halo Top.

Chocolate Topping:

1/2 cup Chocolate Chips ( I used Enjoy Life Foods)

1 tbsp coconut oil  

Method

Cookies: 

  1. Preheat oven to 325F 
  2. In a bowl, whisk 1 egg. Then add in peanut butter and coconut sugar. Mix together. 
  3. Line a baking sheet with parchment paper. Use a cookie scoop to make the cookies. Place them on the parchment paper. Makes 12 cookies. 
  4. Bake for 15 minutes. 
  5. Remove from the oven and place the pan in the freezer for 1 hour so the cookies harden. 

Ice Cream Sandwiches: 

  1. Once the cookies have been in the freezer for an hour, remove. 
  2. Add 2 scoops of ice cream in between 2 cookies. Because the cookies are frozen, you should be able to squish them together to flatten out the ice cream. 
  3. Optional: melt 1/2 cup chocolate chips with 1 tbsp of coconut oil to make a chocolate layer for the cookies. 
  4. Dip 1/2 of the sandwiches in the chocolate layer. 
  5. Place the cookies back on the parchment paper, put back in the fridge for 2-3 hours. 
  6. Enjoy! Makes 6 sandwiches. Store in the freezer.
