Recipe Tips:
Make sure you grease the pan so the pancakes don’t stick and make sure you let them cool before slicing. You can add anything you want on top- fruit, chocolate chips, nuts, etc. You can also drizzle a little honey or maple syrup on top to sweeten it!

Gluten Free Sheet Pan Pancakes
Sheet Pan Pancakes (gluten free, healthy, meal prep). A healthy meal prep breakfast that is easy to make and delicious! Kid friendly meal prep breakfast.
Ingredients
Pancakes:
- 2 eggs
- 3/4 cup vanilla Greek yogurt
- 1 cup oat flour
- 2 tbsp vanilla protein
- 1 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
Toppings:
- 1 cup berries
- 1/2 banana
Method
- Mix the pancakes ingredients into a bowl, lit them sit for 5 minutes
- Add to a greased sheet pan
- Add the toppings
- Bake at 375F for 25 minutes
- Let cool 10 minutes then slice
- Paired with Greek yogurt and peanut butter, made about 4-5 meals!
