Meal Prep Vegan Breakfast Cookies

These meal prep vegan breakfast cookies are also gluten free. Made with only 5 ingredients and you’re able to add in pretty much whatever you want! Chocolate chips, chopped nuts, granola, dried fruit, anything you’d add to your regular oatmeal. I love to make these for breakfast or to have on hand for a healthy snack throughout the day. They are sweetened with banana and maple syrup.

Use vegan chocolate chips to keep these vegan breakfast cookies vegan and gluten free rolled oats to keep them gluten free.

What You Need For This Recipe:

Gluten Free Rolled Oats

Ripe Bananas

Peanut Butter

Maple Syrup

Chocolate Chips

Recipe Tips:

I haven’t tested any other types of oats so if you try any, let me know!

You can sub any nut butter for the peanut butter. You can use sunbutter or granola butter for a nut free option.

You can sub honey for maple syrup

You can leave out the chocolate chips and add in whatever you want!

I like to store these breakfast cookies in the fridge. They’re so good cold with yogurt + peanut butter! I like to make a yogurt bowl with fruit, yogurt, and these cookies.

Meal Prep Vegan Breakfast Cookies

Ingredients

1 cup gluten free rolled oats
1 1/2 mashed banana
1/3 cup runny peanut butter
2 tbsp maple syrup
1/4 cup chocolate chips

Method

  1. Mix the oats, mashed banana, runny peanut butter, and maple syrup together with a spatula (not an electric mixture, you want the oats to have texture)
  2. Then add in the chocolate chips
  3. Line a baking sheet with parchment paper
  4. Use a cookie scoop to scoop out about 9-11 small cookies
  5. Flatten with a fork
  6. Bake at 350F for 16-18 minutes
