Overnight Strawberry Oatmeal

This easy, healthy, gluten free, plant based breakfast is just what you need to start your morning! Made the night before, it is a great grab and go breakfast that’ll put you in the right mindset to get your day going. Packed with protein + probiotics to keep you fueled + your gut healthy as well. This overnight strawberry oatmeal recipe needs to be added to your weekly menu ASAP!

I love easy, meal prepped breakfasts for busy mornings. I am not a morning person at all so when I have a busy morning the last thing I want to do is make a meal. Having this made from the night before is always a lifesaver. It gives me energy to go about my day and I feel good fueling my body with plant based foods. So let’s break down how to make these easy overnight strawberry oats.

Recipe Steps:

You want to prepare this at minimum 2 hours before you plan to eat it. I think it’s easier to make the night before that way when you’re hungry in the morning, it’s ready when you are. But if you wanted to, you could always make the morning of.

So first gather all of your ingredients. You’ll need old fashioned rolled oats (I normally use GF), strawberries, chia seeds, unsweetened nut milk, Lifeway Foods Plantiful Probiotic Drink (INSERT LINK HERE), nut butter of choice, and some maple syrup. Nothing too complicated!

Chop your strawberries and that’s really the only big step you need. You’ll add everything into a jar or container with a lid. You need to make sure you have something with a lid on it so you can shake it up in the morning.

Mix everything in the jar well by shaking it up. Refrigerate from 2 hours up to overnight. Remove the next morning then add some more of the Lifeway Plantiful drink to them because it makes them way creamier + gives you more probiotics. Serve plain or with some granola + more nut butter (always add more nut butter, am I right? haha)

Why Probiotics are Important:

I’ve mentioned probiotics a ton in this post and wanted to provide some insight on why I believe they’re important. I love eating foods that are rich in probiotics, like this Lifeway Plantiful drink is. Probiotics are microorganisms that help improve our gut health. I’ll leave the science explanation to the experts but basically when you eat foods high in probiotics, you’re helping get that good bacteria in your gut. Gut health is so essential to overall health. It seems like every week there’s a new study coming out about gut health being connected to something. Keeping your gut healthy will help your digestion, your immune system, and seriously so many other things that are being discovered constantly!

How I Add Probiotics Into My Diet:

You can get probiotics in a variety of forms but an easy way is adding them into your diet. I love adding this Lifeway dairy free Plantiful probiotic drink because it’s plant based + full of protein + full of probiotics. You can find it here. It’s vegan, organic, and gluten free. A serving has 10 grams of protein + it has 10 live strands of probiotics. They have a ton of delicious flavors but I think the plain one because it doesn’t have any added sugar.

Ingredients

1 1/2 cups gluten free rolled oats

1 1/2 cup unsweetened almond milk

1/2 cup Lifeway Foods Plantiful probiotic drink

1 1/22 tsp maple syrup

3/4  cup chopped strawberries

2 tbsp chia seeds

1 tbsp nut butter

Method

  1. Chop your strawberries as small as you want. 
  2. In a jar that has a lid,  add the oats, almond milk, only 1/4 cup of the Plantiful drink- save the other 1/4 for the next morning, maple syrup, strawberries, chia seeds, and nut butter.
  3. Put the lid on and shake everything up. 
  4. Place in the fridge for 2 hours at least up to overnight. 
  5. When you remove, shake up again, add 1/4 cup of Plantiful to make it super creamy, stir in, and enjoy with some more nut butter on top, granola, whatever sounds good!
