Healthy and Gluten Free Spinach and Feta Frittata
This spinach and feta frittata is healthy, gluten free, and packed with veggies. You can add really whatever veggies you have on hand. I used onion, mushrooms, tomatoes, and spinach. You could also add a little more spice or add spicy salsa on top. I kept the flavors pretty mild but if you like spicy food, definitely add a little hot sauce or sriracha on top!

Recipe Tips:
Make sure you make this in a oven safe dish. You’ll cook it on the stovetop and in the oven so this is important! I like using a cast iron skillet for this.
Topping Ideas:
You could add avocado on top of this spinach and feta frittata. Also salsa, pair with toast, potatoes, sweet potatoes, the options are endless! I love a sweet and savory combo so I made yogurt parfaits packed with granola, almond butter, strawberries, blueberries, and banana. It was super easy to do and gives you a little bit of sweet.

Spinach and Feta Frittata
Spinach Feta Frittata (gluten free, healthy). Ingredients
8 eggs
1 white onion
2 cups spinach
1 8 ounce container mushrooms
1/2 cup cherry tomatoes
Salt & pepper
1 tsp garlic powder
1/4 cup feta
Method
- Dice the onion
- Heat an oven safe skillet over medium heat
- Add olive oil and the onion
- Sauté a few minutes then add in the tomatoes and mushrooms
- Sauté until the mushrooms look almost done (about 5 minutes)
- Then add in spinach and cook another minute
- Preheat oven to 400F
- In a large bowl, whisk the eggs
- Add salt, pepper, and garlic powder
- Mix together
- Pour the eggs onto the veggies and mix it together a little
- Cook on the stovetop for 5 minutes
- Then add to the oven and cook another 6-7 minutes, until the eggs look done in the center
- Remove and let cool 10 minutes on the stove (it cooks a little more)
- Remove and serve!
