Caramel Apple Crisp

Caramel Apple Crisp (vegan and gluten free). A healthy fall breakfast or dessert. It’s so perfect with a scoop of ice cream on top!

Caramel Apple Crisp (vegan and gluten free)

Ingredients

  • 4 apples of choice (I used 2 honey crisp and 2 Granny Smith)
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Topping:

  • 3/4 cup almond flour
  • 2 tbsp maple syrup
  • 1 tbsp coconut sugar
  • 2 tbsp melted coconut oil
  • 1 tsp cinnamon

Caramel Sauce:

  • 1/2 cup dates
  • 1/4 cup oat milk
  • 1/2 tsp vanilla

Method

  1. Soak the dates in warm water for about 10 minutes
  2. Slice the apples.
  3. Heat a small, oven safe skillet for just a few minutes, add the coconut oil + apples + other apple
  4. ingredients.
  5. Sauté for 2-3 mins, not long just enough for the apples to be coated
  6. In a bowl, mix together the topping.
  7. Add the topping to the apples, I broke mine up into pieces so it was more crumbly. You don’t want the pieces to be super thick so make sure to break it up!
  8. Bake at 350F for 30-35 minutes.
  9. While it bakes, make the caramel sauce. In a food processor or blender, add the ingredients and blend.
  10. When it’s done cooking, remove and add the caramel sauce on top.
  11. Slice and enjoy!
