Healthy French Toast Sticks

If you need a healthy breakfast to eat all week long- look no further than these healthy french toast sticks! Easy, minimal ingredients, protein packed- plus you can freeze the extras for later!

We always ate freezer french toast sticks growing up- anyone else?! It was a morning staple on busy mornings- just popped some in a big tray on the oven and they were good to go. Now- just make a big batch of these baked french toast sticks on a Sunday and heat them up all week long!

I made my go to french toast recipe but added in some Ancient Nutrition keto collagen for extra protein (totally tasteless!) + coconut sugar to make them a little sweeter! You could use honey too if you like your french toast sweeter!

I decided to bake these toasts because they’re wayyy easier to manage that way! I just used my amazon silicone baking sheets (makes clean up 100x easier- I used to use aluminum foil but these are way more eco friendly). I think I may just have to start baking all my French Toast!

I always like to be completely transparent and say that I didn’t eat this whole plate. I know things can get confusing about how much a person eats and whatever (always do what makes you feel best!). This recipe made about 3 huge slices of Trader Joe’s sourdough and I had about 7-8 of these healthy french toast sticks!

I paired them with plain yogurt mixed with cinnamon and actually added a little peanut butter too.. so delicious!!

Toss the extras in the freezer and just pop them in the oven or microwave to heat them up throughout the week! Such an easy and delicious breakfast!

Healthy French Toast Sticks

Easy and healthy french toast sticks!

Ingredients

Sourdough bread

1 cup unsweetened almond milk

2 eggs

2 egg whites

2 tbsp cinnamon

1 tsp vanilla

1 scoop protein powder/collagen

2 tbsp coconut sugar

Method

  1. Preheat oven to 350F
  2. Line a baking pan with either foil, silicone baking sheets, or non stick spray
  3. Whisk the eggs together in a bowl then add in the cinnamon, vanilla, collagen, and 1 tbsp of coconut sugar (the other will be for later!)
  4. Cut the bread into slices, soak in the mixture, then line the baking pan. Repeat until all of the mixture is used up or you can use leftover mixture to make scrambled eggs
  5. Bake for 15 mins. Then pull them out and sprinkle with coconut sugar.
  6. Broil for an additional 2-3 minutes to get them crispy!
