Iced Lemon French Toast

Iced Lemon French Toast 🍋🍞 Basically iced lemon cake but easier! This would be perfect for  any spring brunch!

Ingredients

1 large loaf of bread, I like brioche. 

1 1/2 cups milk

3 large eggs

1 lemon, zested

2 tsp vanilla

½ teaspoon ground cinnamon

Lemon icing: 

2 tbsp butter, melted 

1 cup powdered sugar 

1 tbsp lemon juice 

Method

If baking day before: 

The night before, lightly grease baking dish.

Add the bread, stacking the pieces so they overlap a bit 

In a large bowl, whisk together eggs, milk, lemon zest, vanilla extract, and cinnamon.

Pour the mixture slowly over your bread slices in the pan, making sure each piece is completely coated.

Cover the pan with foil and place it in the refrigerator overnight.

When you’re ready to bake, preheat oven to 350F

Bake french toast for 30-35 minutes, or until golden brown.

If baking day of:

Lightly grease baking dish 

Add the bread, stacking the pieces so they overlap a bit 

In a large bowl, whisk together eggs, milk, lemon zest, vanilla extract, and cinnamon.

Pour the mixture slowly over your bread slices in the pan, making sure each piece is completely coated.

Let the mixture soak as long as you have time to, I recommend at least 30 minutes

When you’re ready to bake, preheat oven to 350F

Bake french toast for 30-35 minutes, or until golden brown.

Lemon icing instructions

In a small microwave safe mixing bowl, combine melted butter, powdered sugar and lemon juice until smooth.
•Warm 15 seconds and whisk to remove any clumps.

Remove the French toast from the oven, let cool just a bit, then drizzle the icing on top. Enjoy! –
