Vegan Cinnamon Roll Minis

These gluten free and vegan cinnamon roll minis are so easy to make and so fun. Do you remember when Mcdonald’s used to have cinnamon rolls, I think they were called cinnamelts? Oh my gosh those were delicious. These kind of remind me of those, little perfect bites of cinnamon rolls. The icing for this recipe is made with just two simple ingredients and is my go to icing recipe!

Icing:

I used melted coconut butter on these vegan cinnamon roll minis. I get it from Thrive Market normally but I’ve seen it at walmart too! It’s not the same as coconut oil so don’t use them interchangeably.

Recipe Tips:

I would recommend using extra oat flour on the parchment paper so that way the dough doesn’t stick when you make the cinnamon rolls. You don’t need a lot but enough to coat the parchment paper!

These cinnamon roll donuts are two of the best breakfast items combined into one! Paleo, gluten free, and baked vs fried. Made with almond flour, coconut flour, sweetened with maple syrup, and topped with a delicious coconut butter mixture. They’re perfect served warm, eaten room temp, or cold. The icing will harden if you put them in the fridge which tastes delicious! Hope you all enjoy donuts as much as I do because they’re the most made treat around here haha.

I love banana bread in any form but these bites just hit different. Mini form anything is just more fun and therefore tastier, right? Plus these are made with only 5 ingredients and are gluten free + vegan. We’ve been trying to eat more plant based recipes lately and these bites are a great plant based breakfast, snack, or dessert. Basically, these vegan banana bread bites are tasty any time of time!

Vegan and Gluten Free Cinnamon Roll Minis. Made with oat flour, vegan greek yogurt, cinnamon, coconut sugar, and other simple ingredients. 

Vegan and Gluten Free Cinnamon Roll Minis

Ingredients

Cinnamon Rolls: 

  • 1/2 cup + 2 tbsp gluten free oat flour
  • 1/2 cup vanilla vegan greek yogurt
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp Apple cider vinegar

Cinnamon sugar mixture:

  • 2 tbsp coconut sugar
  • 1/2 tsp cinnamon

Method

  1. Mix all of the cinnamon roll ingredients together, roll into a ball, if it feels super sticky add an additional 2 tbsp oat flour.
  2. Put parchment paper on a flat surface
  3. Add extra oat flour to make sure the dough doesn’t stick.
  4. Roll out the dough, about 1/4 inch thick. I used a rolling pin but I greased it first so the dough didn’t stick. Meaning I just sprayed a little non stick spray on it.
  5. Try to roll it into a rectangle as much as possible!
  6. Then in a small bowl mix the cinnamon sugar mixture
  7. Sprinkle the mixture on the dough, leaving a little room on the edges.
  8. Slice the dough longways into about 4 slices
  9. Then roll them into mini cinnamon rolls
  10. Add to a small greased microwave safe dish
  11. Microwave for 3 1/2-4 minutes
  12. Add melted coconut butter on top and sprinkle a little extra cinnamon!
  13. Makes 4 mini cinnamon rolls!
