Ingredients
1 1/2 cups orzo, cooked al dente
1 cucumber, diced
½ red onion, diced
1 cup tomatoes, diced
1/2 cup feta
1/2 cup chopped spinach
Dressing:
1/4 cup Lemon juice
1 tsp garlic powder
1 tsp lemon zest
½ cup olive oil
2 tbsp honey
Salt and pepper to taste
Method
Cook the orzo al dente according to package instructions. Drain water and immediately rinse with cold water
While to orzo cooks, chop all your veggies
Also, in a small bowl combine your dressing ingredients. Whisk together.
When the orzo is done and cooled, add to a large bowl along with chopped veggies, feta, and dressing
Enjoy! To meal prep, leave the dressing on the side until you’re ready to eat.
