At this point, I need to buy some dang stock in a sweet potato farm haha. I probably provide them with a decent amount of their sales so it would be a smart investment. The thing about sweet potatoes is they are so versatile, so inexpensive, and easy to make. 

Air Fryer Crispy Garlic Fries

These air fryer crispy garlic fries are so tasty! I’ve always been a big fan of crispy fries so I know these will be on repeat over here. They’re vegan and gluten free but I listed substitutions below. You could also bake these fries but adjust how long you bake them! The nice thing is, if you cut the fries thin they don’t take as long to cook! Hope you enjoy!

Loaded Smashed Potatoes

One last Super Bowl recipe and maybe the best for last! These crispy loaded smashed potatoes are SO good.

Ingredients

3 lb bag gold potatoes

1/4 cup olive oil

1 cup shredded cheese

1/3 cup crumbled bacon

1/2 cup sour cream

2 tbsp chopped green onions 

1 tsp garlic powder 

Salt and pepper to taste 

Method

Preheat oven to 450F. Line a pan with parchment paper 

Place potatoes in a large pot and cover with water 

Bring the water to a boil and simmer until the potatoes are tender, about 12-15 minutes 

Drain the water and add to potatoes to the pan 

Using a glass, smash the potatoes until they are flat. You want to do this carefully so they remain all together.

Drizzle with olive oil and add salt, garlic, and pepper 

Add to the oven and bake for 20-25 minutes, until they’re crispy. 

Remove from the oven 

Add the cheese to the potatoes and bake another 2-3 minutes.

Remove and add your toppings. I added sour cream, bacon, and green onion

Serve and enjoy!
