Meal Prep Honey Garlic Chicken and Broccoli

If you need an easy 20 minute meal, this meal prep honey garlic chicken and broccoli is perfect! It only requires one pan and is so quick. It makes about 4 meals so you have lunches all week long if you decide to meal prep it or just make it for dinner! I love doing both. I love honey and garlic together so this meal is one of my favorites.

Meal Prep Tips:

I like to split up the days I buy groceries and the day I meal prep. I normally buy groceries on Saturday and then meal prep on Sunday. If I do it all in one day, I realllly dread it and a lot times put it off all together. I’ve found splitting it up helps motivate me to get it done more!

Healthy Honey Garlic Chicken Meal Prep

Ingredients

  • 3 cups broccoli
  • 3 chicken breasts
  • 4 cloves of garlic, minced
  • 1/4 cup + 2 tbsp honey
  • 1/4 cup + 2 tbsp coconut aminos
  • 1/4 cup water
  • 2 tbsp arrowroot starch (sub cornstarch)
  • 2 cups rice
  • Olive oil

Method

  1. Heat a pan over medium heat
  2. Sauté 3 cups broccoli for 5 minutes in olive oil
  3. Remove from skillet and set aside
  4. Sauté 4 cloves of garlic, minced
  5. Add in more olive oil, garlic, chicken breasts (seasoned with salt and pepper and cut into cubes)
  6. Cook the chicken until it’s browned, about 5-7 minutes depending on how small you cube the chicken
  7. In a small bowl, mix the honey, coconut aminos, and water
  8. Add on top of the chicken once it’s browned
  9. Let it simmer for a few minutes
  10. Stir in arrowroot powder and let it thicken for a minute or two
  11. Remove and serve with cooked rice
  12. Makes 4 meals
