Paleo Chicken Noodle Soup

In the middle of winter, what’s better on a cold evening than a warm cup of soup? There’s nothing more comforting and warming. Cozied up on the couch with a bowl of soup and a cup of tea sounds pretty perfect, right? Well, at least to me it does haha. The problem is most soups are loaded with preservatives and sodium. But not this paleo chicken noodle soup. Packed with veggies, turmeric, and bone broth- it not only tastes good but it will make you feel good too 🙂

This chicken ‘noodle’ soup is actually made with zoodles. Aka one of the best gluten free, paleo noodle substitutes. And it’s cheaper than buying any other healthier version of pasta. Zucchini at Aldi are about $1.99 for 3. I also used chicken bone broth instead of chicken broth because it’s packed with more protein and has collagen in it. And I love anything that has collagen haha. Walmart has a good organic brand actually and Aldi just started carrying some. You can sub chicken broth too if that’s what you’ve got on hand!

I used organic chicken from Butcher Box (linking my discount code for free salmon with a purchase!). I’ve really been trying to prioritize hormone free, organic meat this year. It was something I overlooked for so long. I know not everyone has the means to do so and it’s always important to remember we’ve just gotta do the best we can.

First, I browned the chicken in the skillet. While it cooked, I chopped my veggies. Then I removed the chicken and added in my veggies and spices. I let them cook before adding in bone broth + water + the chicken. I brought it all to a boil. Finally, added in my zoodles that I spiralized with my Kitchen Aid Attachment. The easiest method to spiralize zucchini!

This soup made a big batch- enough for a few meals for both Eli and I. I’ve made it three weeks in a row haha. And it’s Eli approved! We were sitting there eating it and had one of those “who would’ve thought he’d be eating turmeric paleo soup” haha. The true test of a recipe!!

Paleo Chicken Noodle Soup

This healthy, paleo chicken noodle soup is the best and easiest dinner.

Ingredients

2 chicken breasts

1 onion

5 carrots

3 celery stocks

1/2 tsp oregano

1/2 sp parsley

1/4 tsp turmeric

1/2 tsp thyme

4 cups chicken bone broth

2 cups water

3 zucchini

Avocado Oil

salt

Method

  1. Heat a pot over medium heat.
  2. Cut chicken into cubes
  3. Add enough oil to coat the pan then add the chicken in.
  4. SautĂŠ the chicken until it’s browned, about 10 minutes.
  5. While the chicken cooks, chop the veggies.
  6. Then remove the chicken from the pan
  7. Add more oil if needed and add the veggies, cook for 10 more minutes, then add the spices and cook for one more minute.
  8. While the veggies cook, spiralize the zucchini.
  9. After the spices are added and cooked a minute, add in the bone broth and water and chicken. Bring the pot to a boil and let boil for 3 minutes.
  10. Turn the pot to low heat and add in the zoodles. Let cook until the zoodles are soft, about 3-4 mintues.
  11. Salt to taste!
