Paleo Chunky Monkey Bars

No bake, gluten free, plant based, and made with real, simple ingredients! These paleo chunky monkey bars are the perfect dessert for summer because you don’t have to turn on the oven. Keep them in the freezer to grab after a hot day by the pool or an evening spent grilling outside. You won’t be able to resist grabbing one of these out the freezer everytime you walk by.

Truly, there is nothing better than the nut butter and chocolate combo. I mean, what more do you need in life?! The fact that you don’t have to turn on the oven to make these is just an added bonus.

I love using cashew butter in desserts because I think it has the best texture, especially for no bake desserts. You can use almond butter or peanut butter too but I don’t think it comes out with quite the same taste/texture.

How to make them:

First, I mixed together the bar ingredients in a bowl. You need cashew butter, coconut flour, maple syrup, banana, cinnamon, and chocolate chips. That’s it! Seriously- only 6 ingredients needed to make these magical bars.

Once the batter is mixed together, add it to a brownie/cake pan that you lined with parchment paper. It’s important to line the pan because I didn’t the first time I made these (which is when I took the pictures here) and they stuck a little bit. If you line the pan, you’ll be able to get the bars out a lot easier.

Place the pan in the fridge for 5-10 minutes so it can harden a bit. While the batter is in the fridge, time to make the best part! The chocolate layer (insert drool face here). You could have just the chunky monkey bars but like…. why not add more chocolate and nut butter to them? šŸ˜‰

You just need the chocolate chips and cashew butter you used for the bars. In a microwave safe bowl, melt them together for 30 seconds. Then stir and repeat until fully melted. You’ll pour the chocolate layer on top of the bars, smooth with a spatula, and add into the freezer for 2-3 hours.

Once the 2-3 hours has passed, remove, slice, and devour! Keep your leftover bars in the freezer. We love having desserts on hand over here, especially in the summer. There’s nothing better than having a cool dessert on a hot day. We’ve been eating these out on our porch like crazyyy. Going to have to make another batch asap!

Paleo Chunky Monkey Bars

These paleo chunky monkey bars are the perfect no bake dessert. Gluten free and made with real, simple ingredients. A great easy, healthy dessert.

Ingredients

For the bars:Ā 

1 cup cashew butterĀ 

1/2 mashed bananaĀ 

1/3 cup coconut flour

1/4 cup maple syrupĀ 

1 tbsp cinnamonĀ 

1/4 cup chocolate chipsĀ 

Chocolate Layer:Ā 

1/2 cup chocolate chipsĀ 

2 tbsp cashew butter

Method

  1. In a bowl, mix together the bar ingredients: the mashed banana, cashew butter, coconut flour, maple syrup, and cinnamon. Then add in the chocolate chips. Mix together well.Ā 
  2. Line a brownie/cake pan with parchment paper. Pour the batter into it. Put it in the fridge for 5-10 minutes to let it harden.Ā 
  3. While the bars are in the fridge, make the chocolate layer.Ā 
  4. In a small, microwave safe bowl- mix together the 1/2 cup chocolate chips and cashew butter. microwave for 30 seconds, stir, and microwave again for 15 seconds and repeat the heat/stir until fully melted.Ā 
  5. Take the bars out of the fridge, add the chocolate layer on top, smooth with a spatula, and add to the freezer for 2-3 hours.Ā 
  6. Remove, slice, and enjoy šŸ™‚Ā 
  7. Makes 9 bars, store in the freezer
