Paleo Protein Bites

Need an easy, healthy treat to have on hand? These paleo protein bites are the answer! The only have 6 ingredients- crazy right?! It’s amazing that a recipe so simple can taste this amazing but trust me- it does 😉 And they’re made with easy ingredients you’ll already have on hand. Bananas, sweet potatoes, protein powder, eggs, cinnamon, and almond butter. That’s it! And they’re paleo, gluten free, healthy, and just so dang simple.

The best part about these paleo protein bites? They’re soooo customizable! You can use any kind of protein powder you want to change the flavor. I used chocolate protein powder in these but you could use vanilla, strawberry, seriously anything. Also you can use any nut butter you want. If you’re paleo, use almond butter, cashew butter, or pecan butter.

For this recipe- you need a sweet potato that’s already cooked. You can either prep it before by baking it. If you go that method- bake at 400F for 45 minutes. If you need a faster method- microwave it! Most microwaves have a potato setting so just turn that on and pop the sweet potato in. You’ll want to make sure you poke holes in it with a fork beforehand so it doesn’t explode though haha.

I topped these paleo protein bites with cashew butter and dairy free chocolate chips which gave them the best flavor. You won’t be able to stop eating them- I made a batch of 14 on Sunday and by Monday afternoon, we only had 1 left haha. Luckily they’re easy enough to make again and don’t require crazy ingredients! My favorite kind of recipes 🙂

Paleo Protein Bites

These easy, healthy paleo protein bites are so simple to make with only 6 ingredients!

Ingredients

2 eggs

1/2 cup mashed sweet potato (cooked)

1/2 mashed banana

1/4 cup almond butter

1 tsp cinnamon

2 scoops protein powder

Method

  1. Preheat oven to 400F
  2. In a bowl- whisk two eggs. Add in 1/2 cup mashed sweet potato that’s cooked. You can either bake it in the oven beforehand (400F for 45 minutes) or microwave it.
  3. Add in 1/2 mashed banana, cinnamon, almond butter, and protein powder.
  4. Use whatever flavor protein powder you want. I used this Chocolate Collagen Protein that is so so delicious.
  5. Blend all ingredients with a hand mixer of immersion blender
  6. Spray a mini cupcake pan with nonstick spray.
  7. Add scoops of the batter into the pan
  8. Makes 12-14 mini cupcakes
  9. Bake for 18-20 minutes.
  10. Remove and top with whatever you want! I used cashew butter and dairy free chocolate chips.
