A delicious but simple breakfast recipe that will have your mouth watering as soon as you put it in the skillet! Seriously, it makes your kitchen smell like a dream. I will never get tired of the classic peanut butter + banana combo. Added into a french toast mixture, it doesn’t get any tastier. This PB & Banana Stuffed French Toast is my new favorite breakfast or brunch recipe!
Recipe Steps:
First, you need a shallow bowl that will fit your bread in it. Once you get that ready, you’ll make your french toast mixture. Whisk the egg then add in the milk and spices. Whisk together then you’ll start making the sandwich.
You’ll need two slices of bread. I used sourdough. Add peanut butter to one side and then add a banana sliced into coins on the other.
Combine into a sandwich. I found it was easier to add the peanut butter layer on top of the banana layered bread.
Then soak your sandwich in the mixture, making sure both sides get coated well.
Once your sandwich has soaked up the mixture, heat a skillet over medium heat. Add a little ghee, butter, or oil to the pan. Add the pb & banana stuffed french toast to the skillet. Cook for 3-4 minutes on each side.
Remove from the pan, cut in half, and serve! You can add maple syrup or honey on top if you want to make it a little sweeter.
Substitution Options:
Egg- you can sub a flaxseed egg (1 tbsp flaxseed meal + 2.5 tbsp water mixed together and let thicken for 5 minutes).
Almond milk- sub any nut milk you want
Sourdough- use any thick bread you have on hand!

Ingredients
2 slices of sourdough (or any bread!) Peanut butter
1 banana
1 egg
1/2 cup milk of choice (I used almond milk)
1/2 tsp cinnamon
1/2 tsp vanilla
Method
- In a shallow bowl big enough to fit your bread in, whisk the egg
- Then add in milk, cinnamon, and vanilla and whisk together.
- Option to add a little sugar here if you want a sweeter breakfast.
- Then make your Pb banana sandwich.
- Add peanut butter on one side of the bread then add banana coins on the other.
- Combine into a sandwich then dip in your French toast mixture, letting the bread soak it in.
- Heat a skillet over medium heat, add some butter or coconut oil.
- Then add your sandwich in.
- Cook for 3-4 minutes, flip, cook 3-4 more minutes.
- Remove and eat either on its own or top with a little honey or maple syrup.
