Peanut Butter Cup Nice Cream
Saying goodbye to summer with a nice cream recipe! This was the summer of nice cream for our family. I’d made it before but for some reason, we just really were into it this summer. It’s so inexpensive to make and so easy compared to trying to make other homemade ice cream recipes. This peanut butter cup nice cream is easily made vegan, gluten free, and paleo! I’ll list suggestions below for how to adapt it to your lifestyle.

I use my Vitamix Ascent 3500 for all of my nice cream recipes, sauces, smoothies, and even to blend batter for pancakes, waffles, breads, and muffins! It has made all of the difference in the texture of my recipes. You don’t need a nice blender to make recipes but it will make a difference if you’re able to get one!
Substitution Options:
Vegan: Use a vegan vanilla protein powder like the one I linked above. Also use vegan chocolate chips which I liked above as well!
Paleo: Use cashew butter instead of peanut butter. Use almond butter cups or cashew butter cups instead of peanut butter cups.
Storage:
Good luck having any leftovers with this recipe! But if you do or you make a double batch, store in an airtight container in the fridge. This peanut butter cup nice cream tastes great leftover, just leave it out on the counter for about 10 minutes to soften up before diving in.

Method
- Blend the bananas, peanut butter, protein, and salt together
- Then scoop out half the batch into a bowl, place in the freezer.
- Add 2 tbsp cocoa powder and blend the half that’s left in the blender.
- Remove and add chocolate chips and cut up peanut butter cups into each layer.
- I added 3 peanut butter cups total and about 1/3 cup chocolate chips!
- Mix them in there and then you can layer it in a jar or just mix together in bowl!
- Enjoy! Makes 3 servings!
