Egg

Oat milk 

Pumpkin purĆ©e 

Pumpkin pie spice 

Baking powder 

Vanilla 

Maple syrup (optional!)

Ingredients

1 1/2 cups gluten free rolled oatsĀ 

1 eggĀ 

1 1/2 cups oat milkĀ 

3/4 cup pumpkin purĆ©eĀ 

1 tsp pumpkin pie spiceĀ 

2 tsp baking powderĀ 

1 tsp vanillaĀ 

Optional:

2 tbsp maple syrup

Method

Add all ingredients to a blender and blend until smooth.

Heat a skillet over medium heatĀ 

Add oil to a panĀ 

Pour 1-2 spoonfuls of batter to make 1 pancakeĀ 

Cook for 2-3 minutes on each sideĀ 

RemoveĀ 

Makes about 10 mini pancakes
