Cozy, healthy, and full of flavor: I know it’s going to be a go-to dinner recipe for us this year! There’s nothing better than tossing some ingredients in a pot and having a delicious meal waiting for you. And since it’s pumpkin season, I’m of course going to add it to as many recipes as I can! Ground chicken or turkey

Fire roasted diced tomatoes 

Pumpkin purĂ©e 

Bell peppers

Yellow onion

Chicken bone broth

Tomato paste 

Cocoa powder 

Chili powder 

Garlic powder 

Paprika 

Cumin 

Nutmeg 

Cinnamon

Pumpkin Chili

Ingredients

2 lbs ground chicken or ground turkey (I prefer chicken) 

28 ounces of fire roasted diced tomatoes 

1 15 ounce can pumpkin purée 

2 bell peppers, diced 

1 yellow onion, diced 

2 cups chicken bone broth (or just regular broth, I like bone broth for extra protein) 

2 tbsp tomato paste 

2 tbsp cocoa powder 

Spices:

1 1/2 tbsp chili powder 

1 tbsp garlic powder 

1 tsp paprika 

1 1/2 tsp cumin 

1/2 tsp nutmeg 

1 tsp cinnamon

1 tsp salt (can add more to taste later) 

Method

1) Turn your instant pot to sauté mode 

2) Add a little oil 

3) Add the peppers and onion 

4) Sauté for 3-5 minutes 

5) add ground chicken/turkey 

6) sauté until browned then drain excess liquid

7) turn off sauté mode and add the rest of the ingredients 

8) seal the lid and turn on pressure cooker to HIGH and set timer for 10 minutes 

9) when the timer goes off, quick release and enjoy!
