Have you ever heard of a more perfect flavor combo than snickerdoodle pancakes?! I seriously think this might be my favorite pancake combo to date! The cinnamon and coconut sugar was a delicious combo. Also these are the fluffiest pancakes I’ve ever made. Snickerdoodle Paleo Pancakes have my heart if you can’t tell haha.
I have to admit, this recipe made a little bit more than I intended to make haha. That’s what happens when I start making a recipe. It’s a little thick, add more almond milk. It’s a little thin, add more flour. Before you know it, you have a huge bowl of batter! Luckily pancakes are one of the best meals to prep + freeze for later.
I ate some this morning then tossed the others in the freezer to pop in the toaster on a busy morning. If you don’t have pancakes in your weekly meal prep- I highly recommend adding it in. They taste almost exactly the same heated up.
This recipe requires a few more ingredients than I typically use so if you’re looking for a pancake recipe with minimal ingredients check these out: Sweet Potato Pancakes or Chocolate Pumpkin Paleo Pancakes. Both are just as delicious but require less ingredients!
If you aren’t scared of a long ingredient list though- I highly recommend giving these snickerdoodle paleo pancakes a go! Eli said they were the best thing I’ve made so far and I’m pretty pumped to be sharing them 😉 Now if only I could convince him they are better than IHOP haha.
I kept my toppings simple with bananas, honey, and cinnamon. These snickerdoodle paleo pancakes are so good, they truly wouldn’t need any toppings.
The Trick I Used to Make Them Perfect:
So I wanted these to have a sugary coating on the outside. To achieve this, I sprinkled extra coconut sugar on the batter as the cooked. GAME CHANGER. It made the pancakes 10x tastier + crispier. And it didn’t require any extra time which is nice!
I cooked these pancakes in a lot of ghee in my cast iron skillet which also helps get them crispy. And it gives them some healthy fats which is good to get a better balanced breakfast.

Snickerdoodle Paleo Pancakes
These snickerdoodle paleo pancakes are a great paleo, gluten free, and healthy breakfast option!
Ingredients
1 1/2 cup almond flour
2 eggs
1 tbsp coconut flour
1 cup unsweetened almond milk
1 scoop vanilla protein powder
1 tbsp cinnamon
2 tbsp coconut sugar
1 tbsp honey
1 tsp vanilla
Method
- Heat a skillet over low medium heat
- Whisk the eggs in a bowl
- Add in the rest of the ingredients and mix together
- Grease the skillet with ghee, butter, or oil ( I like olive or coconut)
- Use a spoon to make mini pancakes- about 1 1/2 spoonfuls
- Cook the pancakes until they start bubbling, a few minutes on each side
- Serve with whatever toppings you want! I used bananas, honey, and cinnamon
