This has been on repeat for my weekday lunches! Packed with protein and veggies, this sandwich is so satisfying. It’s super nutritious and filling – not to mention really easy to put together when you’re short on time. Perfect for an office or work from home lunch, it’s a recipe you’ll love adding to your rotation.

Spicy Mayo Turkey Avocado Sandwich

The easiest 5 minute lunch! Turkey avocado sandwich with a 3 ingredient spicy mayo.

Ingredients

Sandwich: 

4 slices of bread 

½ lb turkey slices 

1 avocado 

Handful of mixed greens 

Spicy mayo:

1/4 cup mayo 

2 tsp sriracha 

Juice of 1 lime 

Other: 

1 tbsp olive oil or butter

Method

In a small bowl,  mix together the mayo, lime juice, & sriracha 

Assemble your sandwiches, adding ½ of the mayo mixture to each sandwich. 

This makes enough for 2 sandwiches! 

Heat a skillet over low medium heat. 

Add the olive oil to the skillet once it’s heated 

Add the sandwich and toast for a few minutes on each side.
