Vegan and Gluten Free Caesar Pasta Salad
This vegan and gluten free caesar pasta salad is the perfect healthy side dish! I can’t wait to bring this to a bbq this summer! It’s so tasty, people won’t even know that it’s vegan and gluten free. Packed with fiber, nutrients, and flavor. You can use any caesar dressing but I like to make an extra creamy, homemade version. The recipe is below!

You store this vegan caesar pasta salad in the fridge. It’s a good dish to make ahead of time! Just wait to mix the chickpeas in until you’re ready to serve. It keeps them crispy and prevents them from getting soggy. Everything else will be fine if you make it ahead of time!

Ingredients
Vegan Caesar dressing:
1 cup cashews
1 1/4 cup water
2 tbsp lemon juice (fresh)
2 tbsp capers
2 tbsp water from capers jar
2 tbsp Dijon mustard
2 tbsp vegan Mayo
2 garlic cloves (peeled)
2 tbsp nutritional yeast
Sprinkle of salt & pepper
Chickpeas:
1 can of chickpeas
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp cayenne
salt
pepper
Other:
3 cups gluten free pasta
2 cups kale
Nutritional yeast
Method
Vegan Caesar dressing:
- Soak the cashews for at least an hour
- Drain the water, add to a blender, add in the rest of the ingredients
Chickpeas:
- Rinse and drain the chickpeas and pat dry
- add the olive oil and spices, mix together with a spatula
- Bake at 425F for 15 minutes.
Other:
- Cook the pasta according to package instructions
- Then drain and run under cold water to cool it down
- Add to a bowl with the kale
- Add 1/2 the Caesar dressing and mix
- Then add in the cooked chickpeas and the rest of the Caesar dressing
- Mix together
- Sprinkle nutritional yeast on top!
