Vegan and Gluten Free Monkey Bread

This vegan and gluten free monkey bread is pretty easy to make and sooo tasty! We grew up eating monkey bread but my husband had never had it before! So it was fun testing this recipe and having him experience tasting the cinnamon sugar doughy perfection that is monkey bread. This one also happens to be a healthier version that is plant based and made with gluten free oat flour!

What You Need For This Recipe:

Gluten Free oat flour

Arrowroot flour

Oat milk

Apple cider vinegar

Maple syrup

Vanilla

Salt

Baking powder

Cinnamon

Coconut sugar

Coconut oil 

Coconut Butter

Recipe Tips:

Make sure to grease or flour your hands before rolling the dough into little balls. This helps prevent the dough from sticking to your hands as you roll them into balls.

Vegan and Gluten Free Monkey Bread

Ingredients

Monkey Bread:

2 1/2 cups + 2 tbsp gluten free oat flour

3 tbsp arrowroot flour

1 cup oat milk

2 tsp apple cider vinegar

2 tbsp maple syrup

1 tsp vanilla

Sprinkle of salt

2 tsp baking powder

Cinnamon Sugar:

1 1/2 tbsp cinnamon

1/3 cup coconut sugar

1/4 cup melted coconut oil 

Icing:

Melted coconut butter

 

Method

  1. In a small bowl, mix together the oat milk and apple cider vinegar and let it sit for 10 minutes
  2. While you wait for this, mix the cinnamon sugar ingredients together in another small bowl.
  3. In a large mixing bowl, add the rest of the monkey bread ingredients. Then add the oat milk/apple cider vinegar mixture
  4. Mix well
  5. Press it into a ball, you can add a tiny bit more oat flour if it’s pretty sticky.
  6. Grease a small loaf pan
  7. Then grease your hands and roll little pieces of the dough into small balls. I made 15.
  8. Dip them into the cinnamon sugar mixture and then add to the loaf pan
  9. Bake for 30-32 minutes at 350F
  10. Once you remove them, add coconut butter on top!
