Vegan and Gluten Free Maple Pecan Cinnamon Rolls

These maple pecan cinnamon rolls have the soft, cinnamon roll texture with a gooey, cinnamon-sugar inside. Added in some chopped nuts and a maple glaze on top! Can you say yum?! Plus they are gluten free and easily made vegan. Make these and then thank me later for how tasty they are and how amazing your kitchen will smell!

I’ve linked some of the main ingredients you need for this recipe on Amazon! Just click on the word and it will take you straight there. You can use regular rolled oats but get gluten free ones if you follow that diet. If you are vegan, use a vegan greek style yogurt. I love the Kite Hill brand!

Gluten Free Rolled Oats or Oat Flour

Vanilla Greek Yogurt

*Make sure it’s a thicker yogurt or you’ll need to add 1/4 cup more flour*

Maple Syrup

Baking Powder

Apple Cider Vinegar

Recipes Tips:

For this recipe, one of the biggest things to make it successful is making sure the dough is the right consistency. Try to pick out a yogurt that isn’t super runny. I like the Fage plain 2% yogurt! If your yogurt is runny, add 1/4 cup more oat flour.

Also when you roll out the dough, add extra flour on the parchment paper to make sure the maple pecan cinnamon rolls don’t stick. I just used extra oat flour.

Maple Pecan Cinnamon Rolls (Vegan, Gluten Free, Healthy)

Ingredients

Cinnamon Roll Dough: 

1 1/4 cup oat flour 
1 cup vanilla greek yogurt* 
2 tbsp maple syrup
1 tsp baking powder
1 tsp Apple cider vinegar

Maple Pecan Mixture:
1/4 cup pecans
1/4 cup coconut sugar
1/4 cup chopped dates
1 tsp cinnamon

Maple Glaze: 

2 tbsp melted coconut butter

2 tbsp maple syrup

Method

  1. Mix all of the cinnamon roll ingredients together and let it chill 30 minutes.
  2. Then put parchment paper on a flat surface
  3. Add extra oat flour to make sure the dough doesn’t stick.
  4. Roll out the dough, about 1/4 inch thick. I used a rolling pin but I greased it first so the dough didn’t stick. Meaning I just sprayed a little non stick spray on it.
  5. Try to roll it into a rectangle as much as possible!
  6. Then in a food processor, chop and mix the maple pecan mixture
  7. Sprinkle the mixture on the dough, leaving a little room on the edges.
  8. Slice the dough longways into about 5 slices
  9. Then roll them into cinnamon rolls
  10. Add to a small greased baking dish
  11. I added some more pecans on top
  12. Bake at 350F for 20 mins
  13. Add the coconut butter and maple syrup to a bowl and microwave for 20 seconds.
  14. Drizzle on top.
  15. Makes 5-6 small cinnamon rolls.

Notes

*Make sure it’s a thick yogurt. If it’s a little runny, add 1/4 cup more flour!
