*Make sure it’s a thicker yogurt or you’ll need to add 1/4 cup more flour*

Recipes Tips:
For this recipe, one of the biggest things to make it successful is making sure the dough is the right consistency. Try to pick out a yogurt that isn’t super runny. I like the Fage plain 2% yogurt! If your yogurt is runny, add 1/4 cup more oat flour.
Also when you roll out the dough, add extra flour on the parchment paper to make sure the maple pecan cinnamon rolls don’t stick. I just used extra oat flour.

Ingredients
Cinnamon Roll Dough:
1 1/4 cup oat flour
1 cup vanilla greek yogurt*
2 tbsp maple syrup
1 tsp baking powder
1 tsp Apple cider vinegar
Maple Pecan Mixture:
1/4 cup pecans
1/4 cup coconut sugar
1/4 cup chopped dates
1 tsp cinnamon
Maple Glaze:
2 tbsp melted coconut butter
2 tbsp maple syrup
Method
- Mix all of the cinnamon roll ingredients together and let it chill 30 minutes.
- Then put parchment paper on a flat surface
- Add extra oat flour to make sure the dough doesn’t stick.
- Roll out the dough, about 1/4 inch thick. I used a rolling pin but I greased it first so the dough didn’t stick. Meaning I just sprayed a little non stick spray on it.
- Try to roll it into a rectangle as much as possible!
- Then in a food processor, chop and mix the maple pecan mixture
- Sprinkle the mixture on the dough, leaving a little room on the edges.
- Slice the dough longways into about 5 slices
- Then roll them into cinnamon rolls
- Add to a small greased baking dish
- I added some more pecans on top
- Bake at 350F for 20 mins
- Add the coconut butter and maple syrup to a bowl and microwave for 20 seconds.
- Drizzle on top.
- Makes 5-6 small cinnamon rolls.
