These vegan taco stuffed zucchini boats are ready in under 30 minutes and made with only 5 ingredients! You can add whatever toppings you want, I did avocado and vegan feta cheese. I’m not vegan personally but we do meatless mondays over here so I like coming up with vegan recipes. This recipe is the perfect easy dinner for a meatless monday or any night of the week. Vegan Taco Zucchini Boats (healthy, gluten free)


3 zucchini

1 package extra firm tofu

1 packet taco seasoning

1/2 cup salsa

1/2 red onion


vegan feta cheese



  1. Cut the zucchini in half, take a spoon, scoop out the middle, put in a bowl, set aside, repeat for each zucchini
  2. preheat oven to 400F
  3. grease a baking sheet
  4. add the zucchini
  5. bake for 15 minutes
  6. You can press your tofu for 5-20 minutes. You wrap it in a towel and place heavy plates on it. The longer you press, the crispier it will be.
  7. heat a skillet over medium heat
  8. Add oil, diced onion and diced leftover zucchini
  9. In a bowl, crumble the tofu and add taco seasoning
  10. Once the onion and zucchini have been cooking for a few minutes, add the tofu
  11. Add the salsa
  12. Cook for about 5-8 minutes
  13. Remove the zucchini, add the tofu, and add vegan feta on top
  14. bake for 5 more minutes
  15. remove and enjoy!
