Vegan Cookie Dough Brownies
These vegan cookie dough brownies are gluten free and absolutely delicious! I love brownies and I love cookie dough so combining them into one recipe is a pretty epic dessert! The brownies are made with sweet potato, maple syrup, cashew butter, cocoa powder, and some other easy ingredients. The cookie dough layer also has minimal ingredients and it’s so good on it’s own if you don’t want to go through the trouble of making the whole recipe haha.
What You Need For This Recipe:
Sweet Potato
Maple syrup
Cashew butter
Unsweetened cocoa powder
Vanilla
Almond flour
Coconut flour
Coconut sugar
Almond milk
Coconut oil
Vanilla
Salt
Vegan mini chocolate chips
Recipe Tips:
I like to bake the sweet potato ahead of time to save me time while making the recipe. You can bake it the night before or even a few days before. You can also microwave it!
I have only tried this recipe by doing a cookie dough layer on the bottom and then the brownie layer on top. You could try to do the opposite if you want!
I added extra chocolate chips on top because you can never have enough, right? You could add cashew butter on top, chopped nuts, or other types of chocolate chips!
Store these vegan cookie dough brownies in the fridge, not on the counter. You can also store them in the freezer. I like to store them in the freezer because they last a long time! Just don’t store them on the counter because they don’t hold together well.
Make sure when they’re done baking, you let them cool completely in the fridge. They need to firm up a bit!

2/3 cup fully cooked sweet potato (peel and mash after you cook it and then measure it)
1/4 cup maple syrup
1/2 cup cashew butter
1/4 cup unsweetened cocoa powder
1 tsp vanilla
Cookie Dough Layer:
Ingredients:
1 cup almond flour
1 tbsp coconut flour
1/4 cup coconut sugar
1/4 cup almond milk
1/4 cup melted coconut oil
2 tsp vanilla
1/2 tsp salt
1/4-1/2 cup mini chocolate chips
Method
- I baked the sweet potatoes ahead of time at 425F for 50 minutes.
- Then I peeled and mashed them.
- Add to a bowl
- Add in the rest of the ingredients
- Mix well
- In a separate bowl, mix the cookie dough ingredients.
- Line a brownie pan with parchment paper or grease it well.
- add the cookie dough layer
- Add the brownie layer on top
- Baked at 350F for 32-34 minutes
- Place in the fridge to cool for an hour or until they’re completely cooled.
- Slice and enjoy!
- Store in the fridge
