Vegan & gluten free pb&j oat loaf! A healthy breakfast that is perfect to meal prep for the week. Is there anything more classic than a pb&j. Anything pb&j flavored hits the spot for me! Heating up a slice of this load plus some yogurt is the best breakfast!

Vegan & Gluten Free PB&J oat loaf

What You Need For This Recipe:

gluten free old fashioned rolled oats

oat milk (use any milk you want) 

coconut sugar (use whatever sugar you want) 

vanilla protein (sub 1/2 tsp vanilla extract) 

peanut butter 

cinnamon 

vanilla extract 

baking powder 

blueberries 

chia seeds

Cinnamon Sugar Pancakes! A dream come true for any cinnamon roll lovers! These pancakes are gluten free, paleo, and just so tasty. I topped mine with melted coconut butter and oh. my. gosh. was it good!!! We are so obsessed with these and I love to make a big batch and freeze some of them! They reheat well if you pop them in the toaster.

Vegan & Gluten Free PB&J oat loaf

Vegan & Gluten Free PB&J oat loaf

Ingredients

2 cups gluten free old fashioned rolled oats
1 1/2 cups oat milk (use any milk you want)
1/4 cup coconut sugar (use whatever sugar you want)
2 tbsp vanilla protein (sub 1/2 tsp vanilla extract)
2 tbsp peanut butter
1 1/2 tsp cinnamon
1 tsp vanilla extract
2 tsp baking powder
Chia Blueberry Jam:
1/2 cup blueberries
1 tbsp chia seeds
2 tbsp water

Method

Blend all of the bread ingredients all together
Jam:
Add the blueberries, chia seeds, and water to a small pot
Heat over medium heat for about 7-8 minutes, mashing the blueberries. They should thicken & become jam like.
Pour the blended oat mixture into  a loaf pan lined with parchment paper
Stir in the jam
Bake at 400F for 30-32 minutes
I drizzled some more peanut butter on top!
