Vegan Pumpkin Stuffed French Toast
Vegan Pumpkin French Toast Stuffed with Vegan Cream Cheese
Ingredients
- 1 tbsp flaxseed meal + 2.5 tbsp water
- 5 thick slices of bread
- 1/2 cup vegan cream cheese
- 3/4 cup unsweetened almond milk
- 2 tbsp organic pumpkin purée
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- 2–3 tsp maple syrup depending on how sweet you want it
Method
- Combine the flaxseed and water into a small bowl and let it sit for 5 minutes
- In a large shallow bowl, mix together the milk, cinnamon, pumpkin pie spice, pumpkin puree, vanilla, and maple syrup
- Then add in the flax egg
- add 1- 1 1/2 tbsp cream cheese to one slice of bread and fold in half
- Soak the bread in the french toast mixture
- repeat for each slice
- cook for 3-4 minutes in a skillet over low medium heat in coconut oil
- enjoy!
