Maple Pecan Granola

This maple pecan granola is a vegan, gluten free breakfast, snack, or even dessert! It’s got protein added in too to give it a little flavor and the added protein keeps me full longer. Maple pecan is one of my all time favorite combos. I love making maple roasted pecans during the holidays soon!

gluten free old fashioned rolled oats 
maple syrup 
coconut oil

cinnamon 
whole pecans 
smashed pecans

These healthy pumpkin waffles are another easy fall breakfast recipe! Pumpkin spice everything this time of year, right? These waffles are paleo, gluten free, and made with pretty minimal ingredients! Whip up a batch and then freeze a bunch for an easy meal prepped breakfast during the week. Topping them with maple syrup is the only way to go. A little melted butter on there too and it’s my dream meal!

Paleo, gluten free, and made with pretty simple ingredients as well. These pumpkin muffins came out with the perfect texture- soft and moist on the inside and a little bit crispy on the outside. You’ll want to make these vegan pumpkin muffins and then hide them from the rest of your family/friends asap.

Maple Pecan Protein Granola

Ingredients

2 cups gluten free old fashioned rolled oats
1/4 cup maple syrup
1/4 cup coconut oil
1/4 cup vegan vanilla protein (I use @ritual, code 10Peyton works for a discount!)
1 1/2 tsp cinnamon
1/2 cup whole pecans
1/4 cup smashed pecans

Method

  1. In a bowl mix together the oats, pecans, and protein powder.
  2. In a sauce pan, heat the coconut oil, maple syrup, and cinnamon for about 5 minutes over low medium heat.
  3. Pour over the oats
  4. Mix together with a spatula
  5. Spread over a sheet pan covered with parchment paper.
  6. Bake at 325F for 20 minutes and let it cool completely before breaking into clumps.
  7. Store on the counter for up to a week or in the fridge for two weeks.
