This vegan pumpkin stuffed french toast is such a dreamy fall breakfast! The french toast is stuffed with vegan cream cheese. It doesn’t take long to make and is delicious topped with some maple syrup and powdered sugar.

These gluten free sheet pan pancakes are the dream meal prep breakfast recipe! Have pancakes every morning of the week with this easy meal prep. Top the pancakes 4 different ways for a little variety all week long too. This would be a great kid friendly recipe too! I love having breakfast already made and I can imagine if you have kids it makes mornings a lot easier too! These pancakes are made with oat flour, eggs, yogurt, and more. I paired them with yogurt and peanut butter every day.

Vegan Pumpkin French Toast Stuffed with Vegan Cream Cheese

Vegan Pumpkin Stuffed French Toast

Ingredients

  • 1 tbsp flaxseed meal + 2.5 tbsp water
  • 5 thick slices of bread
  • 1/2 cup vegan cream cheese
  • 3/4 cup unsweetened almond milk
  • 2 tbsp organic pumpkin purée
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • 23 tsp maple syrup depending on how sweet you want it

Method

  1. Combine the flaxseed and water into a small bowl and let it sit for 5 minutes
  2. In a large shallow bowl, mix together the milk, cinnamon, pumpkin pie spice, pumpkin puree, vanilla, and maple syrup
  3. Then add in the flax egg
  4. add 1- 1 1/2 tbsp cream cheese to one slice of bread and fold in half
  5. Soak the bread in the french toast mixture
  6. repeat for each slice
  7. cook for 3-4 minutes in a skillet over low medium heat in coconut oil
  8. enjoy!
