Lemon Sugar Cookie Bars

Another delicious summer dessert idea! These no bake lemon sugar cookie bars are the perfect dessert to make when you don’t feel like turning the oven on. Plus they have the best lemon-y flavor! I love a no bake dessert- so easy to make and so refreshing. These bars are gluten free, grain free, and paleo.

These lemon bars have the perfect amount of lemon flavor . Not too much but enough so you know it’s there. I use lemon zest and fresh lemon juice in my recipes because it’s so much better than lemon extract! Trust me. It takes more work but it’s so worth it! Also I added collagen into these bars to give them a little protein. I used an unflavored version so you still get that delicious lemon flavor. Talking more about why I add collagen below!

Why I Add Collagen To My Diet:

I love to add collagen into my recipes because it gives them more protein. Also I love the benefits I personally see from adding collagen into my diet. I think adding it in has helped with my joint health as well as my hair/skin. But everyone is different and sees different results. Always do what works best for you and remember that I’m not a doctor.

Not only do I like adding it to easy desserts like this, I add collagen daily to my coffee. It adds 9 grams of protein and only 45 calories. I like to add a flavored one because it’s a healthier alternative to creamer in your coffee. Plus it dissolves right in and isn’t messy like adding protein into your coffee. Add a little unsweetened almond milk and it’s the perfect way to start the day!

What Collagen I Use:

I love this Ancient Nutrition Multi Collagen pictured above. All of the products they make are incredibly high quality, ethically sourced. Whenever I’m buying animal protein of any kind, that’s always what I look for. None of their collagens have an artificial flavor taste, which is important to me as well. Also it isn’t chalky like some protein powder can be. You can find the collagen I used here. Every product they make is not only delicious but also the best quality around!

Lemon Bar Icing:

In this recipe, I used a mixture of coconut butter, maple syrup, and lemon juice. If you don’t have coconut butter, you could make an icing mixture of powdered sugar and almond milk. Start with 1/4 cup powdered sugar + 1 tsp milk. Mix together then add more milk to thin it out if needed.

No Bake Lemon Cookie Bars {paleo, gluten free}

Ingredients

1 cup cashew butter
1/2 cup coconut flour
1/2 cup maple syrup
2 tbsp Ancient nutrition collagen protein
1/4 cup lemon juice
1 tsp vanilla
1 tsp cinnamon
1 tbsp lemon zest
Icing:
1/2 cup coconut butter
1/2 cup maple syrup
1 tbsp lemon juice

Method

  1. Mix it all of the bar ingredients together in a mixing bowl.
  2. Then line a brownie pan with parchment paper.
  3. Smooth it out and put in the freezer for 2 hours at least. Then remove and top with the icing.
  4. To make this icing: Melt the icing ingredients for 30 seconds in the microwave and mix it together.
  5. I’ll make this about 10-15 minutes before I need it.
  6. Add the icing on top and then put back in the freezer for 30 mins- an hour to let it harden.
  7. Slice and enjoy!
