Vegan Lentil Taco Meat

This vegan lentil taco meat has so many uses! I use this easy recipe for taco bowls like this recipe or actual tacos, quesadillas, nachos, etc. You can throw this on any recipe you use regular taco meat for! The nice thing about this meal is lentils are so inexpensive compared to chicken or beef. So you can make an easy, inexpensive vegan meal!

What You Need For This Recipe:

Lentils

Onion

Olive oil

Garlic powder 

Onion powder 

Chipotle powder 

Chili powder 

Sea salt 

Salsa 

Large Pan

Recipe Tips:

The key to getting the lentils to be a good texture is to mash them a *little* but not completely. You don’t want them to be mushy but you also don’t want them to be too crunchy. Take a fork and mash about half of the lentils.

I paired my lentil taco meat with sauteed bell peppers, onions, rice, and guac! You can use this vegan lentil taco meat for actual tacos, quesadillas, nachos, seriously so many options with this recipe!

Vegan Lentil Taco Bowls (gluten free, plant based)

Ingredients

Lentil Taco Meat:

1 cup of lentils 

3-4 cups of water

1/2 diced onion 

olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp Chipotle powder

1 tsp chili powder

1/2 tsp sea salt

1/2 cup salsa

Method

  1. Cook the lentils in 3-4 cups of water according to the package instructions. Takes about 20-25 minutes for this step.
  2. When the lentils were almost done, I sautéed the diced onion in olive oil for 5 mins
  3. Then I strained the extra water from the lentils. 
  4. I added 1 cup cooked lentils, garlic powder, onion powder, chipotle powder, chili powder, sea salt, 1/2 cup water and salsa
  5. Then I mashed about 1/2 the lentils.
  6. Let it simmer for a few minutes until all of the water was absorbed.
  7. I paired mine with sauteed peppers and onions + rice + guac.
