Peanut Butter Filled Chocolate Muffins
These peanut butter filled chocolate muffins are the best combo! Everyone loves peanut butter cups and these are basically a muffin version. The peanut butter filling is made with only 3 ingredients and takes these chocolate muffins to another level! I added chocolate frosting on top which is optional but so good. These muffins would be so fun for Easter but really any time of year! If you love chocolate and peanut butter, you’ll love these!
What You Need For This Recipe:
eggs
almond flour
coconut flour
cocoa powder
maple syrup
melted ghee or butter
peanut butter
chocolate chips
baking powder
honey
arrowroot flour
muffin tin
chocolate frosting
Recipe Tips:
When you cut the center to add the peanut butter filling, make sure you leave some space at the bottom of the muffin. Don’t cut all the way through, you need a little space for the peanut butter filling to go without falling out of the muffin.
Save the center of these peanut butter filled chocolate muffins for a little mini muffin later on. You can even add a little frosting on top of them!

Ingredients
Chocolate muffins:
3 eggs
3/4 cup almond flour
1/4 cup coconut flour
1/4 cup cocoa powder
1/2 cup maple syrup
1/4 cup melted ghee or butter
1/4 cup Peanut butter
1/4 cup chocolate chips
1 tsp baking powder
Peanut Butter filling:
1/4 cup peanut butter
1/4 cup honey
2 tbsp arrowroot flour
Method
In a mixing bowl, whisk the eggs
Then add in everything for the muffins besides the chocolate chips
Mix together well
Fold in the chocolate chips
Add batter to muffin tins, filling about 3/4 of the way and bake at
350F for 20 mins.
Let cool for about 10 minutes
Take a knife and cut the center of the muffins out, only cutting about 3/4 of the way down
Set the middle part aside and now you have mini muffins!
Add the peanut butter filling
Topped with simple mills chocolate frosting!
