Buffalo Chicken Pizza (gluten free)

This buffalo chicken pizza is one of the many pizza creations I’ve made over the past 6 months! I use my gluten free sweet potato pizza crust (recipe linked below) and topped with veggies, buffalo chicken, buffalo sauce, and cheese. Making pizza from scratch really isn’t as hard as you think! Gluten Free Buffalo Chicken Pizza

What You Need For This Recipe:

Crust of Choice (linked my sweet potato crust)

1 chicken breast

onion

kale

cheese of choice

hot sauce

nutritional yeast

garlic

paprika

salt

Substitution Options:

Nutritional Yeast- parmesan cheese

Buffalo Sauce Recipe- Ranch Dressing or Blue Cheese Dressing

Chicken- Cauliflower

Gluten Free Buffalo Chicken Pizza

Ingredients

  • Crust of Choice
  • 1/2 cup cheese of choice 
  • 1/2 onion 
  • 1 cup kale 

Buffalo Chicken: 

  • 1 chicken breast
  • 1/3 cup hot sauce
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1/2 tsp garlic
  • Sprinkle of salt

Buffalo Sauce (can use ranch dressing instead of this) 

  • 1/4 cup + 2 tbsp hot sauce
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic
  • 1/2 tsp paprika
  • Sprinkle of salt

Method

  1. Make whatever crust you want according to those instructions. Linked my sweet potato crust recipe here! 
  2. Bake the chicken breast at 400F for 30ish minutes (until internal heat is 165F) You can do this ahead of time! 
  3. In a bowl, shred the chicken. Then add the buffalo chicken ingredients and mix together. Set aside 
  4. In another, small bowl- add the buffalo sauce ingredients. You can sub just regular ranch dressing instead of making the buffalo sauce! 
  5. Saute the onion and kale for about 4-5 minutes in a skillet. 
  6. Add the buffalo sauce on the crust, then add the sauteed veggies, and then chicken. 
  7. Sprinkle with the cheese of choice 
  8. Bake 5-7 minutes. 
  9. Remove and enjoy!
