Cinnamon Apple Baked Oats

If you want your house to smell like fall… you need to make a batch of this cinnamon apple baked oatmeal! My kitchen has never smelled better. I made this recipe right when I got up and it was so nice while I did the rest of my morning routine to have it cooking!

It’s been getting colder in the mornings over here so I have been loving easy + cozy breakfasts. This one is so nice because you can throw it in the oven and forget about it while it bakes. It would be perfect to meal prep for the week too!

In my mind, I envisioned myself eating a warm breakfast like this on a Saturday morning in these new rocking chairs I bought on a whim off of Facebook Marketplace. Sounds so nice, right? Only to find out when I picked them up they were child size hahaha. Eli was pretty amused after hearing me talk about how cute and fun they were going to be.

The chairs disappointed me but this cinnamon apple baked oatmeal meal did not! Even though it was eaten in my regular kitchen and not in crisp fall air- it was still pretty perfect. I will definitely have to continue the hunt for the perfect outdoor chairs but not for the perfect fall breakfast haha.

I cut the cinnamon apple baked oatmeal into four slices and have three left for later on this week (plus maybe I’ll share a slice… maybe). Then I topped it with some almond milk yogurt + warm sautéed cinnamon apples to put this meal over the top! Seriously drool worthy right here.

Perfect fall breakfast that the entire family will love or it’s perfect to prep for just one person to eat throughout the week! Either way, you can’t go wrong!

Cinnamon Apple Baked Oats (GF, plant based)

A healthy and easy fall breakfast! Gluten free and plant based. A perfect cooking for one recipe or for the entire family.

Ingredients

2 cups gluten free oats (I like these)

1 1/2 cup unsweetened almond milk

2 scoops vanilla protein powder  (I like this plant based brand- use code choosingbalance15 for a discount)

1/2 tsp vanilla

1/2 tbsp coconut sugar

1 tbsp cinnamon

1/2 apple

Method

  1. Preheat oven to 350F
  2. Mix all the ingredients together
  3. Spray a cast iron skillet (or regular baking pan- whatever you have works!) with nonstick spray
  4. Pour mixture in
  5. Bake at 350F for 25 minutes
