A delicious, flavor packed breakfast or dessert that’s also paleo and gluten free. I’m a huge banana bread fan (check out my single serving banana bread here or my zucchini banana bread bites here ) so I’m always down for a new banana bread recipe. The best part about banana bread is so many flavors compliment it. Chocolate chips, blueberries, peanut butter- you can throw so many things in your batter. This time I went with a cinnamon sugar middle. Turned out so tasty. Pus Cinnamon Banana Bread is such a cozy flavor!
Recipe Tips:
This recipe is relatively simple to make. I used 2 mini loaves because I think it makes the edges so crispy. Kind of like one of those brownie pans that makes all of the brownies edges. I love when you have a baked good that’s just a tiny bit crispy on the outside but super soft in the middle. You could double to recipe to make a regular loaf though.
Cinnamon Sugar Layer:
One of my favorite parts of this recipe is the cinnamon sugar layer in the middle. I made a small portion of a cinnamon sugar mixture (1/4 cup coconut sugar + 1/2 cinnamon) in a small bowl. To add it to the bread, I added 1/2 of the banana bread batter to the greased loaf pans.
Then I added about 3/4 of the cinnamon sugar mixture. I wanted to leave a little to sprinkle on top.
Next, I added the remaining batter on top. I took a knife and smoothed out the top for a more even bread.
Finally, I sprinkled the remaining mixture on the top. Then it’s ready to put in the oven!
Scaling The Recipe for Less or More:
Like I said above, you can double this recipe to make a regular loaf. You’d need to adjust the baking time to about 50-55 minutes. Or you could cut the recipe in 1/2 and make a single serving recipe in a small baking dish, like a ramekin. For the baking time of a mini loaf, it would be about the same. Check at 35 minutes just to be safe. This cinnamon banana bread is delicious in any form!

Ingredients
Banana Bread:
2 eggs
2 bananas
1/4 cup unsweetened almond milk
1/4 cup coconut flour
1 tbsp cinnamon
1/2 tsp baking powder
1/2 tsp vanilla
2 tbsp nut butter
Cinnamon sugar mixture:
1/4 cup coconut sugar
1/2 tsp cinnamon
Method
- Preheat oven to 350F
- In a bowl, whisk the eggs
- Then add in the rest of the bread ingredients and mix well.
- This recipe makes enough for 2 mini loaves*
- Grease 2 mini loaves then add 1/2 the batter to them.
- Then put 3/4 of the cinnamon sugar mixture on top.
- Top with the rest of the batter.
- Sprinkle the remaining cinnamon sugar mixture on top.
- Bake for 40-45 minutes.
Notes
*You can cut the recipe in 1/2 and make a mini loaf in a ramekin. Or double for a full loaf.
