My obsession with baked oatmeal is at another level. But this time I made my go to oats with cranberries, seriously so good. I am a newbie at cranberry recipes but this one was soooo good. The perfect amount of sweetness and tartness. The cinnamon apples didn’t hurt either đ These cranberry apple baked oats may be my new favorite way to flavor baked oats!
If you’ve never made baked oats, you should try to do it ASAP! Think your classic oatmeal but more like a dessert.. yup dessert for breakfast! Plus they make your kitchen smell like the inside of a bakery. I have been on a baked oatmeal kick since October (just a few of my baked oats: Gingerbread Baked Oats, Apple Cinnamon Baked Oats)
The best part about baked oatmeal is the fact that you can combine all the ingredients into a bowl, mix it together, pour it into a cast iron skillet or a pan. Then pop it in the oven and forget about it for 40 minutes. Make it the night before or first thing in the morning. You’ll think you have a fall scented candle lit by the time you’re out of the shower haha.
I added collagen into this recipe for extra protein but you could omit it or sub it with your favorite protein powder! The protein helps keep me full a little longer and prevents that afternoon hanger haha.
I topped this slice of oatmeal with kefir (packed with probiotics and protein) and cinnamon apples. Simple toppings but sometimes the best ones are the simplest! I’ll eat this oatmeal bake throughout the week as a snack, dessert, or breakfast. Or heck even lunch and dinner haha. The best type of recipe can be eaten any time of day!

Cranberry Apple Baked Oats
A healthy meal prep option, these cranberry apple baked oats are the best gluten free breakfast!
Ingredients
2 cups gluten free rolled oats *
1 1/2 cup unsweetened almond milk
1 small apple (diced- about 1 cup)
1/2 cup fresh cranberries
2 tbsp honey
1 tsp baking powder
1 tbsp cinnamon
1 scoop collagen or protein powder
1 egg
Nonstick spray
Method
- Preheat oven to 350F
- In a large bowl, whisk the egg then combine all the ingredients into a bowl and mix together
- Spray a cast iron skillet or pan with non stick spray
- Pour the mixture in and bake for 40 minutes
- Serve with your favorite toppings!

*Can use regular rolled oats
