French Toast Cups
French Toast Cups! The easiest way to have French toast with minimal effort/not having to make multiple batches. These are great for meal prep.
Ingredients
7 slices of bread ( about 1/2 loaf)
5 eggs
1/2 cup milk
2 tsp cinnamon
2 tsp vanilla extract or 2 tbsp vanilla protein
Sprinkle of salt
Topping:
1/4 cup coconut sugar
2 tsp cinnamon
1/2 tbsp melted coconut oil
Method
Whisk together the eggs then add in the milk, cinnamon, vanilla, & sprinkle of salt
Mix well
Cut the bread into cubes
Add to a bowl & pour the mixture on top. Use a spatula and make sure all the bread is coated
Pour mixture into a muffin tin lined with cupcake liners. It makes it much easier to remove! Fill to the top!
In a small bowl, mix together the topping ingredients (coconut sugar, cinnamon, coconut oil)
Then sprinkle the topping over the muffins
bake at 350F for 25 minutes
Remove, let cool, & enjoy! Makes 8 muffins!
