This gluten free and vegan vodka pasta is a delicious and healthier spin on the classic pasta recipe. I love making plant based versions of my favorite recipes. This pasta is creamy and has a great flavor. You can use any pasta you want but I used gluten free chickpea pasta to pack in some extra protein. There’s nothing I love more in the fall than soup and pasta. They’re both so warming and cozy. I need a fireplace that I can curl up in front of and dive into this bowl.

I love this easy gluten free pasta salad recipe because it’s loaded with vegetables and really simple to make. All you have to do is boil some pasta and chop your veggies, that’s it! I like simple recipes in the summer because who wants to spend hours in the kitchen when it’s so hot? No thank you. This recipe doesn’t require you to turn your oven on either which is nice.

Ingredients
- 1 white onion
- 3 cloves garlic
- 1 15 ounce can diced tomatoes
- 1 15 ounce can full fat coconut milk
- 1 tbsp capers
- 1 tsp red pepper flakes
- 1/2 cup water
- 1 tsp oregano
- 10 ounce gluten free pasta
- 1/4 cup basil
- 3 tbsp vodka
Method
- Cook pasta according to package instructions
- Dice the onion
- Heat a skillet over low medium heat and add olive oil
- Add the onion and garlic, sauté for about 5 minutes
- Add the tomatoes and let the cook for about 2-3 minutes before adding the coconut milk, capers, red pepper flakes, oregano, and water
- Let cook for another 2-3 minutes
- Remove from heat and let cool for a few minutes before adding it to your blender
- Add in basil
- Optional to add some nutritional yeast for cheesiness! I like to add 1/4 cup if I use it!
- Blend until smooth
- Add cooked pasta to the skillet and add the sauce on top
- Add 3 tbsp vodka in and let it simmer for 8-10 minutes, until the alcohol cooks off
- Remove and serve!
