This healthy 30 minute strawberry jalapeño chicken is the best easy and healthy summer meal. The chicken has a cilantro lime marinade and is topped with an easy strawberry jalapeno salsa. I have been dreaming up so many strawberry jalapeño dishes lately. Why? Because Trader Joe’s come out with some new strawberry jalapeño chips and it has me obsessed with that flavor combo! I feel like that always happens to me, I discover something new at Trader Joe’s and get inspired. Trying new food always gives me a lot of inspo which is a great excuse to always try new food haha.
Strawberry Jalapeno Salsa:
This strawberry jalapeño salsa is made with strawberries, jalapeños, avocado, cilantro, lime juice, and some spices. It’s so easy to make! I’m going to be using this salsa on recipes for the new few weeks because I feel like it will go so well with chips, on top of toast, on other protein sources too.
How To Cook The Chicken:

Ingredients
Chicken:
2 tbsp lime juice
1/2 tsp salt
2 tbsp cilantro
1 tbsp olive oil
1 tsp garlic
Strawberry Jalapeño Salsa:
1/2 cup chopped strawberries
1 diced jalapeño
1 diced avocado
Juice of 1 lime
2 tbsp cilantro
Salt
Method
Mix all of the chicken marinade together in a small bowl
Add on top of 2 chicken breasts
Soak for 15 minutes
Heat a pan over medium heat
Add olive oil
Cook for 5 minutes on each side (check internal temp)
Mix all of the strawberry jalapeno salsa ingredients together. Add on top of the chicken. I also added cauliflower rice!
