I’m always looking for delicious, healthy desserts and these sweet potato brownies fit the bill perfectly! You would never know one of the main ingredients in these brownies are sweet potatoes. These brownies are so chocolatey and fudge-like; plus, packed with secret, hidden veggies. The texture of the sweet potato make them so good. I think these brownies could make a fun snack for kids, too! Even better, they are gluten free. I know it sounds crazy, but just trust me! You have to try these and let me know what you think about them.

Sweet Potato Brownies

Ingredients

1 cup mashed sweet potato

1 cup peanut butter 

2  eggs

⅔ cup maple syrup 

2 tsp pure vanilla extract

⅔ cup cocoa powder 

½ tsp baking soda 

1 bar dark chocolate, broken up into chunks

Method

  1. Cook the sweet potato. You can bake at 400F for 30-40 minutes or microwave for about 8 minutes! 
  2. Let cool & peel the sweet potato 
  3. Preheat oven to 350F for the brownies 
  4. Mash the sweet potato and measure out 1 cup 
  5. Add the mashed sweet potato to a large mixing bowl along with the wet ingredients: peanut butter, eggs, pure maple syrup & vanilla extract.
  6. stir well until everything is well-combined
  7. Stir in the cocoa powder & baking soda 
  8. Add in the chocolate chunks
  9. Add to a 9 inch brownie pan lined with parchment paper 
  10. Bake for 25-30 minutes 
  11. Remove, let cool, slice, & enjoy!
