Meal Prep Sesame Chickpeas with Almond Butter Sauce
I’m doing a meal prep lunches series on my Instagram this week sharing some easy and healthy recipes. These sesame chickpeas with almond butter sauce are one of my favorite vegan recipes. It’s great to meal prep or just great to make for dinner. It doesn’t take too long so it’s a perfect weeknight dinner! I love using this almond butter sauce on other recipes too.
Meal Prep Vegan Breakfast Cookies
These meal prep vegan breakfast cookies are also gluten free. Made with only 5 ingredients and you’re able to add in pretty much whatever you want! Chocolate chips, chopped nuts, granola, dried fruit, anything you’d add to your regular oatmeal. I love to make these for breakfast or to have on hand for a healthy snack throughout the day. They are sweetened with banana and maple syrup.
Instant Pot Chicken Tortilla Soup
This instant pot chicken tortilla soup is always a hit in our house! I made it this weekend for Eli’s parents and we all really enjoyed it. I’m not used to cooking for more than 2 people so big instant pot meals are always my go to when I have others over! It’s quick, easy, and always hits the spot!
This soup has lots of flavor in it and just a little bit of spice. Nothing crazy so if you love spicy soups (me!), add some more at the end! I like to make meals a little less spicy and then spice them up on my own. It works better when you have multiple people to do that so everyone can be happy!
Instant Pot Vegan Burrito Bowls
Instant Pot Vegan Burrito Bowls (gluten free, plant based). Healthy meal prep recipe that is perfect to make for lunch all week long.
Ingredients
- 1 onion
- 2 bell peppers
- 2 15 ounce cans of corn
- 1 15 ounce can chickpeas
- 2 cups water
- 1 tbsp chipotle juice
- 1 cup rice
- 1 packet of taco seasoning
- 1/2 cup salsa
- 1/4 cup nutritional yeast (optional)
Method
- Dice the onion and peppers
- Add a little olive oil on the bottom of the pot and turn on sauté mode
- add the diced veggies and sauté for 3-4 minutes
- Then add the taco seasoning on top along with the corn, chickpeas, salsa, chipotle sauce, and the rice.
- Pour water on top.
- Do not stir the rice in!
- Pressure cook on the rice setting for 12 minutes.
- Release the pressure
- Remove and add to your meal prep containers/ add toppings!
- Makes enough for about 5-6 meals
