Meal prep thai chicken wraps
Ingredients
Chicken Wraps:
3 chicken breasts
5 carrots
1 English cucumber
1/2 cup red cabbage
5 tortilla wraps of choice
Sauce:
1/3 cup peanut butter
1/4 cup water
1 tbsp maple syrup
1 tbsp coconut aminos
1 tbsp apple cider vinegar
Method
- Whisk the sauce ingredients in a small bowl
- Cut the chicken into cubes
- Heat a skillet over medium heat
- Add olive oil & the chicken
- Sauté for about 5-6 minutes, until it’s cooked
- Add 1/2 of the sauce mixture & let it simmer for 2-3 minutes
- Remove & let cool
- Slice your veggies
- Storage:
- Store the sauce & veggies & chicken in separate containers in the fridge.
- On the day you want a wrap, assemble it
- Add sauce, chicken, cabbage, carrots, & cucumbers to the wrap & roll!
- Wraps can get soggy in the fridge so I wouldn’t make it more than 24 hours in advance! Makes enough for 5-6 wraps!
