One Pan Enchilada Skillet

Ingredients

1 white onion, diced 

1 bell pepper, diced 

1 tbsp oil

1 1/2 cups sweet potato, peeled and cut into small cubes 

Spices:

1 1/2 tsp garlic powder 

1 tsp cumin 

1 1/2 tsp chili powder

1, 15 oz can black beans, drained and rinsed

1, 15 ounce can corn 

1,15 ounce can enchilada sauce

5 gluten free corn tortillas, cut into strips

1 cup vegan cheese

Method

  1. Heat a large skillet over medium heat 
  2. Add the oil + diced onions and peppers to the pan and sauté for about 5 minutes. Add the sweet potatoes continue sautéing another 10-12 minutes until the sweet potato is fork tender. Stir frequently 
  3. Add the black beans, corn, corn strips, enchilada sauce, and spices Lower heat and stir well to mix. Let simmer for a few minutes.
  4. Sprinkle the cheese over the top of the skillet.  Turn the oven on broil and broil for just 1-2 minutes, until the cheese is melted. 
  5. Remove from heat and serve!
