Ground Chicken

Vegan/Dairy Free Mayo

Hot Sauce or Buffalo Sauce

Nutritional yeast 

Garlic powder 

Onion powder 

Salt

Buffalo Chicken Stuffed Peppers

Buffalo Chicken Stuffed Peppers, an easy weeknight dinner for the entire family. This recipe is basically buffalo chicken dip stuffed inside bell peppers.

Ingredients

3 bell peppers 

1 lb ground chicken, cooked completely

3/4 cup vegan/ dairy free mayo 

1/2 cup hot sauce or buffalo sauce 

1/4 cup nutritional yeast 

Spices:

1 tsp garlic powder 

1 tsp onion powder 

1 tsp salt 

Toppings:

Dairy free ranch 

Green onions

Method

Preheat oven to 400 degrees 

Heat a skillet over medium heat 

Add oil, ground chicken, salt, & pepper and cook until browned 

Cut & deseed the bell peppers 

Add to a greased baking dish 

In a bowl, add the cooked ground chicken, mayo, hot sauce, spices, & nutritional yeast 

Stir to combine 

Add to bell peppers 

Add to the oven & cook for 30 minutes 

Remove & top with ranch dressing & green onions when ready to eat! 

To store: store in an airtight container for up to 4 days. 

I like to double this recipe for meal prep! 

Reheat in the oven or air fryer for best results!
